Gluten Free Banana Bread

Who else misses how we baked banana bread in our early lockdown?



We also miss the busy streets just before 9:00 am where people were enjoying their morning exercise, walking their dogs or simply enjoying a stroll with their morning coffee in hand. Instead we are now rushing off to work and the side-streets are empty and the traffic is busy.


By no means is this a bad thing but rather an observation. Have we forgotten all the things we said we must keep doing even when we do go back to "almost normal"?


We have decided to try and make a consistent effort and not make excuses that "life is too busy". We can still make time for those small pleasures even if it's simply baking banana bread on the weekend or enjoying a slow morning when we need to take a step back from our busy lives.


So here is a delicious banana bread recipe for anyone who wants to slow down, even if it's just for a few minutes and enjoy some home-baked goodness with some tea and coffee:


Gluten Free Banana Bread:


- 3-4 ripe bananas

- 110g Butter (mash bananas and butter together)

- 1/2 cup of sugar

- 2 eggs beaten (add sugar and eggs and mix well)

- 2 cups of gluten free cake flour (can also use normal cake flour)

- 1/2 tsp bicarbonate soda

- 1/2 tsp baking powder

(Add sifted dry ingredients and mix well)

- spoon into a greased loaf tin and bake at 160-170 degrees for about an hour (until the skewer comes out clean).


This recipe is so easy and delicious (it's our go-to every-time!)
